Raw milk→sterilize(75℃, 15s)→cool(32℃)→Add the fermentation agent (1.4%) →maturate (32℃, 1.5h)→add milk-clotting enzyme (0.016%, m/v)→place it at rest→cutting the curb →place it in the mould drain the whey→overturn→soak it with salt spray the white-mould fermentation agent→fully ripen(7.2℃, RH95/25~30d).
